Ingredients

Scale

2 cups shelled unsalted pistachios

12 tsp olive oil or avocado oil (optional)

1/4 tsp sea salt

1 tsp honey or maple syrup (optional)

Instructions

1. Preheat oven to 325°F. Spread pistachios on baking sheet and roast for 7–10 minutes.

2. Let pistachios cool slightly, then transfer to food processor.

3. Blend in pulses until crumbly, then continuously for 3–5 minutes.

4. Scrape sides as needed and continue until smooth.

5. Add oil if needed for creaminess. Season with salt and sweetener if desired.

6. Store in a clean jar in refrigerator for up to 2 weeks.

Notes

Roasting enhances flavor—don’t skip it.

Pistachio butter may harden in fridge; stir before using.

Use as a spread, dressing base, or dessert ingredient.
