Juicy, smoky, and slightly sweet, this chipotle honey chicken is perfect for weeknight dinners or weekend grilling.
Ingredients
4 boneless, skinless chicken thighs or breasts
1/4 cup honey
2 chipotle peppers in adobo, minced
1 tbsp adobo sauce
2 cloves garlic, minced
1 tbsp olive oil
1 tsp lime juice
1/2 tsp cumin
Salt and pepper to taste
Instructions
1. In a bowl, whisk honey, chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, salt, and pepper.
2. Place chicken in a bowl or bag and pour marinade over it. Refrigerate for at least 30 minutes.
3. Preheat grill, skillet, or oven (400°F).
4. Cook chicken until internal temperature reaches 165°F and glaze is sticky and slightly charred.
5. Let rest for 5 minutes, then serve.
Notes
Use thighs for juicier texture.
Marinate overnight for deeper flavor.
Simmer leftover marinade to use as glaze.
